My co-workers and I were in town from Houston and went to Jasper's on a Thursday night after a long day of work. Jasper's is located in the center of an ersatz town square that makes you feel as though you just stumbled onto the movie set of the Truman Show. As soon as I walked into the restaurant, I looked at the stylish decor, saw the good-looking suburban crowd gathering at the bar, and thought to myself ""Uh oh: I'm in a gussied up Chili's. Hotel food, here we come"" I'm happy to say that I was wrong, and that Jasper's exceeded my expectations in almost every way. We ate calamari that was tender, not chewy, and was served with the perfect amount of sauce (smoky soy sauce with citrus) It was delicious! Among the entrees we ordered was a flat iron steak that was seasoned perfectly and was served with spinach that was allowed to be spinach (not covered with heavy sauce or wilted beyond recognition). The ribs were coveted by everyone at the table and were served with this ridiculously good potato concoction that tasted like a bakedpotatosaladfries. Can't describe it. The only critique we had was that the temperature of many of the proteins was off. The salmon, which was requested pink, was fully cooked (though not overcooked), and the ribeye, which was requested slightly pink, was bright red. Interestingly, I ordered the flat iron and asked that the grill station prepare it as they thought best. The knowledgeable server said it would come medium; it came medium rare, but I think I preferred it medium rare anyway, so no harm, no foul. Ultimately, we all were so pleased by the food that we were still talking about it the next day.
