I'm sure they have forgotten more about making bread than I ever knew, but I can tell you what I prefer in bread. I am not a fan of crunchy crust. If I was making the bread I would also maximize the interior volume to surface area ratio. For a quick lunch time meal this place works. The sandwiches are tasty if you can get around the hard crust. You will pay $1 - $2 more than a typical fast-food restaurant in the area.
