i have been going back to azuma for years even after i moved into the city. the sushi is just as fresh as hatsuhana without the manhattan traffic.
azuma's uni is wonderful. the taste is clean as it gets outside of eating it straight out of the shell. the squid is cut in such a way that makes it melts in your mouth instead of being chewy. the herring roe is heavenly. i need to find their recipe. everything is fresh and delicious. not just the obvious tuna, salmon, yellowtail, etc. and their handmade soy sauce makes everything even better.
