I got my sushi initiation at Mikado many years ago and was hooked. I've since missed no opportunity to visit new sushi spots whereever I go but I've found none better than Mikado in Salt Lake City. Excellent selection, excellent quality and skilled, artful presentation by very engaging chefs. I generally visit during off hours and have never had anything but prompt and courteous service. I've never experienced anything other than the sushi bar. Prices are a little steep but if you avoid the exotic (which I never do) you could easily fill up for $20 or less.
