I've known Tetsu since the 1980's and became one of his most loyal customers when he first opened Ginza in the early 90's. At the time he had quality fish, highly skilled chefs, effecient wait help, and a fun atmostphere. Slowly but surely I've watched most all aspects of the place slide dramatically into mediocrity. At the same time I've watched Shogun maintain it's high standards and the new Tsunami restaurant blow by everyone else. Ginza still can satisfy with a simple sushi lunch special or with the well-known Mars roll, but most else disappoints.
