I agree with the previous reviewer, the last head chef was a lot better. I used to go there every friday at lunch to have ramen, but since the change of the new head chef I havent gone as much. The problem with the new head chef is that he does not shake out all the water out of the ramen, thus making the ramen soggy and the broth watered down when he prepares it. I would always get strong soup base, heavy oil and hard ramen, but now it taste like light soup base, light oil and soft ramen. Since the broth taste watered down I cant seem to taste the buttery and porky flavor as much as before. Pros: its ramen! Cons: doesnt taste as great as it used to... more

Hakata Ramen as it should be. Fast, hot, tasty, with more available. The service at this place is nearly identical to that in Japan. The noodles are prepared correctly, the broth is always good, the sides have an inflection of SoCal in them and the price is right. There is a reason there is almost always a wait at this place. There is a reason that there is a good mix of young hipsters and Japanese businessmen here all the time. The reason is that this is the best Noodle shop on the west coast.
