Jeffrey and Kingfish at the sushi bar are great chefs. They enjoy talking to the customers and are eager to statisfy you. Many of their dishes have a spicy Texas flare. If you like ""spicy"" ask for Jeffrey's special spicy sauce in place of the regular soy sauce.
Sid, at the hibachi grill, is a very good chef and funny entertainer. He can grill up some of the best beef and scallops I have tasted (doen't over cook the meat like many chefs do).
Pros: Good Chefs, Good sushi, Grilled scallops
Cons: Wait staff unattentiv, fixtures need dusting, could be cleaner
