I just used Dulce for my wedding cake, booked months in advance. My original wedding venue which we had also booked months prior fell through two weeks before, so obviously we were scrambling and frantic. Our original venue had an indoor spot for the cake to be displayed, but the last minute venue was indoor/outdoor, with the cake having to be displayed either in an un-airconditioned historic mansion or outdoors under a tent. I relayed this information to Dulce, and was told that this would not be a problem, they understood my situation. Because of the frantic nature of getting a wedding for 180 pulled together in two weeks, there was a miscommuication between my wedding planner and Dulce. She thought the cake was supposed to be there at 3, but I had asked them to bring it at 5. Unbeknownst to me, she called and asked them to bring it at 3 which caused them to to rearrange their delivery schedule. Long story short, the cake arrived with a big rip on top, it was missing a key design element that I ~thought~ was supposed to be there, and the filling was wrong. Other than that, the cake was absolutely beautiful and tasted DELICIOUS. So after the wedding, I had no intentions of demanding money back or being irate. I simply emailed saying that a few things were wrong, just FYI. I received back a mile long email explaining in detail how my wedding was a huge inconvenience, how they should have charged me extra but didn't, how the design element had never been finalized or factored into the price, and that I had asked that the filing be on half the cake only. Actually, I had asked the cake flavor be different on different tiers, NOT the filling. Anyway, I think I was as polite as I could be with my original email, and I can't understand why a simple, ""We're very sorry, there must have been a miscommunication,"" or something of the like wasn't the reply. I thought the owner was a lovely person upon first meeting, but I guess graciousness isn't her strong suit.
