I've sung praises of Bubba's for many years. This is not just the best local place for burgers — and yes, choose the buffalo patty option — but the whole experience is easily among the most comforting, friendly, personable, interesting, unique, humorous, delicious and amazing food establishments you will ever come to know. The ironically massive Westpark Tollway was built around it for a reason. One of the city planners chose a design which ensured Bubba's was spared because he liked the place, and it would help feed the highway crews, which would in-turn keep Bubba's afloat (true story, ask Richard, the owner). Burger-wise, the balance of taste, texture and character has been carefully crafted and enforced for decades. Your choice of white or wheat buns are toasted to perfection. The simple toppings are farm market fresh. No need to specify medium, rare, etc. The patty is cooked and seasoned perfectly every time. The jalepeño potato salad is just as balanced and delicious, with a whisper of after burn to make it interesting. And appropriately, everything is priced paper pocket-change cheap. They take credit cards, but you probably won't need them. If you are an American hamburger aficionado, yes, it's probably the best burger you'll find in H-town. But go there and get in touch with your roots. This is a Smithsonian-grade Texas Gulf Coast icehouse. There are bumper stickers on the partitions I swear I saw in the '70's. You can hear Willie & Waylon and the boys whistling through the cracks in the walls. It smells amazing. No chronic grease funk, mainly because they lack a deep fryer. The place is rustic, not quite ramshackle, but clean and safe — unless maybe you're under the influence — and parking appears almost infinite. Kudos to the staff who are always kind, friendly and attentive in a personal laid-back way. Not because they are ordered to be, but because they are. Bubba's goes beyond what many call a 5-star burger joint. It's a living, breathing slice of home, a time machine perhaps, and a comfort that comes from more than just the food.
