Once upon a time there was a young man that wanted to experience new things. A newcomer to Houston, he had never had a buffalo burger. Right out of high school, he was feeling daring; so one day he decided to try out the local's secret burger joint, Bubba's. To say that Bubba's was different was an understatement; he had never eaten in a shack under a highway for starters. The overtly Texan decor overwhelmed him at first, but he learned to appreciate it in time. But it was when he got to the counter that he uttered the words that would set events in motion that would change his life forever. In his brazenness, he ordered a double buffalo burger with cheese and a white bun, to top it off, he tried one of the several microbrew sodas they offered. So far it seemed, this place was pretty much like your typical burger joint, except a little quirkier. He couldn't have been more wrong. What the young man did not know was that Bubba's has discovered the way to transform crack cocaine into buffalo burger patties. All it took was one bite to get the unsuspecting young man hooked. A terrible addiction that would consume his life was born. Soon, this young man's life revolved around his addiction, he could only achieve happiness while consuming the burgers: the meat was so flavorful, the buns so perfectly grilled, crisp, and buttery, the smoked jalapenos so satisfactory. He could only stand by and watch his life savings drain into the black hole that is Bubba's Burger shack. Moody and angry when denied Bubba's, the man lost all his friends, only finding solace by diving deeper into his addiction. When he tried to shake off his addiction and try other burger places, the comparative shortcomings of the other burgers served only to further root his need for Bubba's. Sadly, this young man is me. I have become a victim of Bubba's glorious burgers. They say that the first step to recovering is admitting you have a problem, well I do; but I embrace it. Let's call me a functioning Bubbaholic. more

Bubba's big bison burgers! 3/31/2010

It is most likely that you would never and probably do not aspire to eat at a shack under a highway, even when lured by the promise of tasty burgers. Yet this is no ordinary shack and these are no ordinary burgers. This is THE shack that was miraculously spared when an entire highway was built, and these are the tastiest burgers in town. Forget the premiums of grass-fed beef and think bigger. Bigger like bison. Think Bubba’s. Bubba’s is authentically Texan in every way from the road food style posters on the wall to the lone star paraphernalia and St. Arnold’s dominant beverage selections. Patrons are always pleasant and everything is served with genuine warmth. In short, Bubba’s is my happy place. When I feel the weight of the world crushing down upon me, I head to the shack under the highway for a double buffalo burger and a cold St. Arnold’s root beer. more

Sunday Brunch Disappointment 8/18/2009

My husband & I have been to Bubba's so many times & really like the buffalo burgers & cold beer. We are always hearing about their brunch & decided to try it this past Sunday (8/16/09). We got there at 11:30AM, no other customers were there. The guy behind the counter was rude to us when we asked about breakfast & the champaign. He said breakfast ends at 12:00 noon. My husband looked at his watch & said, ""Wells it's a quarter til, so do we get breakfast or not?"" The cooks response back was, ""If I haven't started the burgers."" \r \r We got our breakfast and my breakfast taco with buffalo sausage was excellant but we didn't really enjoy our visit to Bubba's because we felt unwanted. We felt the cook was mad at us & we needed to hurry up & eat & get the hell out of there.\r \r My husband, who is always wanting to stop by Bubba's, says he doesn't care if he ever sets foot inside the joint again.\r \r I'm sure we'll be back because we enjoy the buffalo burgers but not any time soon!\r \r \r \r Pros: good buffalo burgers Cons: they need to fix the place up a bit more

Truly Overrated 8/10/2009

Read about Bubba's on this site and being a burger lover had to go try it out. I got the buffalo burger they are known for. I couldn't understand the fuss over it. The meat was dry to the taste and looked about the same. I have had much better burgers. Don't believe the hype, unless you like dry, tasteless burgers. Also a note about the restaurant. I don't mind retro looking places or places with charm. But honestly this pale did not look like it had been cleaned in a while. Pros: Can't think of one Cons: Dry lifeless burgers, Dingy restaurant. more

AMAZING BUFFALO BURGERS!!! 4/30/2009

theres not really much to say about bubbas aside from the fact that it has REALLY GOOD buffalo (bacon) burgers. its sort of an odd location for a burger place (or anything really) but it works for them. you can chose to eat in the patio or inside. theres no fries so you'll just have to bring your own....or get some chips! ive been there about 6 times and ive yet to have anything bad to say about the place. it can get sorta pricey but nothing out of the ordinary for non-fast food burgers. overall freaking awesome place. Pros: Best buffalo burgers/cozy Cons: no fries. :( more

I've sung praises of Bubba's for many years. This is not just the best local place for burgers — and yes, choose the buffalo patty option — but the whole experience is easily among the most comforting, friendly, personable, interesting, unique, humorous, delicious and amazing food establishments you will ever come to know. The ironically massive Westpark Tollway was built around it for a reason. One of the city planners chose a design which ensured Bubba's was spared because he liked the place, and it would help feed the highway crews, which would in-turn keep Bubba's afloat (true story, ask Richard, the owner). Burger-wise, the balance of taste, texture and character has been carefully crafted and enforced for decades. Your choice of white or wheat buns are toasted to perfection. The simple toppings are farm market fresh. No need to specify medium, rare, etc. The patty is cooked and seasoned perfectly every time. The jalepeño potato salad is just as balanced and delicious, with a whisper of after burn to make it interesting. And appropriately, everything is priced paper pocket-change cheap. They take credit cards, but you probably won't need them. If you are an American hamburger aficionado, yes, it's probably the best burger you'll find in H-town. But go there and get in touch with your roots. This is a Smithsonian-grade Texas Gulf Coast icehouse. There are bumper stickers on the partitions I swear I saw in the '70's. You can hear Willie & Waylon and the boys whistling through the cracks in the walls. It smells amazing. No chronic grease funk, mainly because they lack a deep fryer. The place is rustic, not quite ramshackle, but clean and safe — unless maybe you're under the influence — and parking appears almost infinite. Kudos to the staff who are always kind, friendly and attentive in a personal laid-back way. Not because they are ordered to be, but because they are. Bubba's goes beyond what many call a 5-star burger joint. It's a living, breathing slice of home, a time machine perhaps, and a comfort that comes from more than just the food. Pros: The food. The owner & staff. But most of all, THE PLACE Cons: Bubba's is con-proof. more

Fun place to eat and hang out with great food and cold beer 3/2/2009

I hadn't been to Bubba's in awhile because I moved and I was missing it. I just went back and had another great experience. I was immediately reminded of why I used to go there all the time. The food is awesome. The burgers are great, beef or buffalo. They are huge burgers. You can't beat the value for the quantity and quality of the food I love the BLT. It is some of the best bacon around. Their homemade chili is also something you don't want to miss. Add it to your burger, order a frito pie, or just eat it plain - it makes a great meal. The homemade jalapeno potato salad is also good and I usually don't like potato salad. The staff is extremely friendly and they remembered me even after I hadn't been in awhile. Bubba's is also a great place to hang out on the deck and drink beer with friends. There are always friendly people around you. You can even bring your dog with you. They have a lot of interesting memorabilia to look at. I would definatley recommed Bubba's to anybody. Pros: Great food, fun atmosphere, friendly staff Cons: Houston traffic more

Regular customer who loves the best hamburger in Houston 3/2/2009

Wow, those last two reviews were pretty harsh. I have lived near Bubba's for years now, and have been a regular customer for awhile now. Not once have I had a bad experience. Sure, if you go on the weekend or during one of the busy lunch hours, be expected to wait awhile. Kinda common sense, if you see a thousand cars in their huge parking lot, there are probably a lot of other people waiting for their food, so if you're in a hurry you might want to go somewhere else. I mean have you seen the size of their kitchen, really?\r Anyways, I love this place. The staff knows me by my first name, and has ALWAYS been courteous and polite. Hell, if you read the majority of the other reviews pretty much everybody else says the same thing. I'm sorry if the last two people had a bad experience, but I tell you this place is awesome, give it another try.\r Awesome hamburgers, cool atmosphere, great staff.\r Pros: Helpful staff, best buffalo burger in Houston, unique Cons: Nothing more

Simply the Finest Burger I Have Wrapped My Lips Around 12/2/2008

We frequently travel to Houston for shopping and lunch and had seen an episode of ?The Hungry Detective? on the Food Network that featured Bubba?s Texas Burger Shack. My wife and I along with another couple made a pilgrimage just to see what all the talk was about. First of all the restaurant is literally under the freeway. If you don?t know where you are going you are never going to find this place but it is worth whatever planning and navigation it takes to get there. Bubba?s Buffalo Burgers might be the best genuine hamburger I have ever tasted. No gimmicks or special flavoring. This burger is a simple masterpiece. Everything on this burger is PERFECT from the buns and fresh veggies through the perfectly prepared hamburger patty. No special flavors just everything done right!. Pros: Awesome Burger, great atmosphere Cons: I could see them getting crowded in a rush, could be difficult to find. more

Best bufflo burger anywhere 11/7/2008

I started eating lunch at Bubba's in 1985, buffalo burgers and long neck Lone Star beer. The beer has changed but the buffalo burgers are the best as is the potato salad. Now I am an infrequent visitor to Houston but every time I visit, I make a point of at least one lunch at Bubba's. Can' beat the relaxed frendly\r atmosphere. Man this place is still here under the Westpark freway. The best burger you could ever have or want! Buffalo is low in fat, which I need, plus bufalos don't get cancer or anything like that. Its crazy that you can get a burger that is so good 4 u and taste like heavan. Hot sauce? They got like 3 kinds. Don't let this pass you by. Hell, I'll buy you 1 if you're scared. They got good beef burgers, but go 4 bufalo! Please, don't 4get who told you about this place! i want credit for it! Pros: come at 11:30am or 2pm if you wana sit inside where there's a/c, otherwise the porch won't bother you a bit. Burgers are that good! they have THE BEST burgers in town. old fashin burger shack with friendley staff. highly recommended. i first heard about bubba at Food Network TV and when I stopped by to try their burgers, i was blown away. best place in town period.
