Aix is a beautiful, quaint restaurant that Denver has never seen the likes of until now. After visiting France I yearned for something close to home that would help take me back to the sunlit beaches and warm fragrant air that blows off the Mediterranean. Aix finally has given Denver a true French restaurant that understands how the French cook and eat. It is simple, yet elegant, and the food sings on your palate. I love their use of vegetables in their roasted vegetable terrine, their salads come crisp, with just the right amount of dressing. My husband had the venison which was succlent and sweet my salmon was cooked perfectly. To top it off was an excellent peach tart with a minty sauce that made me feel as if I was back on the Riviera again. Thank you Aix, I am glad someone in this town finally gets IT.
