As a military brat I went to high school in Hawaii and was introduced to Hawaiian shortbread cookies via the school cafeteria. They were absolutely wonderful. I have tried many, many shortbread recipes trying to duplicate the flavor and texture of the cafeteria cookies. No luck until a return trip to the islands 45 years later. I discovered Donna's Shortbread Coolies at a Long's Drugstore in Hilo and I was immediately back in high school. No recipe, but I had my cookie back. Donna's Bakery makes several types of cookies. All are great, but the shortbread cookies are the BEST. I have shared this treat with a number of friends and they are now all addicted. If you are headed to Hawaii, check out the local grocery stores and Long's drugstore. Each usually has a supply of snack packs (4-6 cookies) and a large tub.
