Located across from the Pike Place Market, Beechers Handmade Cheese is a wonderful place to visit and buy some delectable, fresh cheese. I was first introduced to Beechers when I was at the market buying some fish and vegetables for a dinner I was hosting. Though the window you can watch them make the cheese. After standing at the window, mesmerized by the process, I went inside the shop to try a sample ... it was some of the best cheese I have ever tasted. I bought some for the dinner party and it was a huge success. The only problem is my guest filled up on cheese before the dinner was served. There have a few different varieties, all of them fresh and very tasty. Great for a wine and cheese party.
