Well, the journey is over. I have been on this journey for the best seafood in Colorado. I've tried everything it seems, but nothing comes close to real good east-coast authentic seafood. Well, my opinion on that changed when I tried Simms Landing. The food here is simply amazing. A few people have left reviews saying that they weren't impressed. I HIGHLY recommend trying this place again. When we went the other weekend (Middle of October 2006) it was breathtaking. I told my server that the food was simply amazing and he made a comment saying that they just got rid of their old chef and hired a new guy. I guess he was a well-respected culinary arts teacher somewhere (can't remember where). I guess they got rid of the last guy because of complaints. Well, let me tell you... this new chef knows how to cook and he knows how to do it very VERY well. I assume that you guys that left poor reviews probably tried this place when the last chef was there because when we went the new (and improved) chef just started. I tried the european fish trio. If I remember right it had salmon, grouper and halibut cooked to perfection on top of delicious mashed potatoes served with steamed vegetables and rice pilaf. My wife tried a shrimp pasta. Both meals turned out excellent but I definitely would take the trio over the pasta any day. Service was excellent and the view was great. Very nice ambience, too.
