I ordered an end cut last night. Most places are happy to get rid of their end cuts. I just happen to like them. When my Prime Rib arrived, it was clearly not an end cut, it was an overcooked regular slice of PR. NOT what I ordered. The waitress knew it wasn't an end cut and took it back to the kitchen. Then, management came out to tell me that it was indeed an end cut, and that it was trimmed. I told them that they were kidding themselves if they thought it was an end cut and told them that I had no time to argue and would take the over cooked piece of merd. My waitress was kind enough to take the steak away and actually brought me the end that she was going to have prepared. Here is where I realized the error of this ""steakhouse"". They don't have the PR made. They take a raw side of beef and cut it, THEN grill it to order. This is kind of a unique way to prepare PR. Normally, the PR is slow roasted and cut to order. This way of cooking it makes the End Cut the most flavorful piece of the side. If its simply thrown on a grill or pan, its just the fattiest part of the side. \r

I will NEVER order PR at this place again, and would not allow anyone at my table to do so. The PR is a special cut and should be enjoyed accordingly. Its not a sirloin, filet or strip that can simply be heated and served. Santa Fe is in a great location and prices are reasonable, but this episode has really turned me off to them. I can't go back and won't let friends do so either.
