The Migas ? I asked to substitute the beans with potatoes, chose flour tortillas, and I selected the chipotle sauce as the topping. When the plate arrived it was certainly filled; however, of the thirds that it was divided into it seemed that the smallest third belonged to the Migas (while the rice took up far more space). The Migas were stacked ? there?s really no other way to explain it ? at the bottom were the eggs, veggies, and tortilla chips, on top of this was a layer of chipotle sauce and on top of this was a little bit of melted cheese. \r \r They were good, not great, but definitely not bad and they were genuinely satisfying. The tortilla chips within were plentiful and still pretty crunchy and the chipotle sauce was evenly distributed and spicy. Indeed the great failing of the Migas (other than lack of quantity) was that they really weren?t very cheesy?at all. The layer of cheese was thinly grated and barely melted ? making the Migas more like scrambled eggs with a few chips thrown in and some chipotle sauce on top. The potatoes were decent, but the presence of the rice only served as a reminder that this was space on the plate being wasted.
