I often lament the fact that here in Nashville, one often can't find Chinese food, just the Chinese buffets. However, there are regular Chinese buffets, good Chinese Buffets, GREAT Chinese Buffets, and then there are the Awful Chinese Buffets. Evergreen is Awful. Maybe if you're there during a crush, it wouldn't be so bad, but I judge the buffets by their slow nights. We were there during normal dinner hour on what must have been a slow night. Everything had been left sitting out for hours, everything was either dried out or slimy. Better to close their doors on a slow night than to be too cheap to serve their customers reasonably fresh food.
