You can often gauge a good authentic Chinese restaurant by the number of Chinese patrons that go there. We have only gone to China One for dim sum (Saturday and Sunday between 11:00 a.m and 3:00 p.m.), and usually over half of the patrons are Asian. I love eating dim sum at China One. As soon as you're seated (and sometimes this can be a long wait, for it gets crowded during peak dim sum time) waitstaff come around pushing carts filled with delicious treats. You can just look and choose whatever you'd like! Eating dim sum at China One is my favorite dining experience in the area. If you want to get seated right away, I'd suggest getting there close to 11:00 a.m., or later like around 2:00 p.m. Pros: great dim sum, prompt service Cons: crowded parking, so-so ambience
