2 if you think a California roll is traditional sushi, it's not, it was invented in San Perdro.
3 using the rice to soak up soy sauce is not a way to enjoy sushi
I love Chitose because it is the closest thing to traditional sushi I have found. They respect their ingredients, perfectly prepared sushi rice, amazing fish such a o-toro, chutoro and uni.
We go here one a month for omakase, letting the chef choose our course for tasty adventure.
Plus they have organic sake
