My wife and I are recent transplants from NYC, so we know what Jean-Georges (and David Rockwell) can do. The food was excellent--we enjoyed the Goat Cheese Fondue (which is really more like a scrumptuous blintz) and Chicken Samosas (fresh!), the mixed green salad, Mahi-Mahi (tangy and lightly spicy) and Duck L'Orange (cooked to medium rare perfection), and finished with the Passion-Souflee with Chocolate Sorbet (along with an additional scoop of Green Apple Sorbet), and it was ALL worth ordering again and again. I also eyed the sirloin longingly, I must admit--for next time for me, for sure. One oddity and deficit, really--no side dishes! We gladly would have paid for seasoned or even plain rice and perhaps some Asian greens as accompaniments (only the sirloin gets honored with a starch), or more gladly would have seen them included in the dishes. The service was attentive and professional (ask for Michael--he does a great job steering you through the menu without being pushy), if sometimes a bit uneven (salads came too fast and wine too slow). Overall, Chambers Kitchen was by far the best meal we've had in MN, in the most visually appealing, genuinely comfortable (great chairs!), hippest, 'all-the-beautiful-people' nightspot in town. Don't miss the ice bar and fire pit in the winter, and be sure to check out all the art around the hotel and restaurant. We can't wait to go back.
