Bamboo house probably has the best chinese food on a buffet in Tallahassee. I agree with the reviewer Paul Y. that the best bet is to have the chef put together a meal for you. But if you're feeling indecisive (or really really hungry) just head to the bar. Don't miss the spring rolls and the crab ragoon (both of which will make you question other restaurant's take on these classics). They have a good share of vegetarian and meat dishes. The service is always prompt (I don't think I've ever had to ask for a refill of my water), and I never get the feeling like I am a cow being herded to the trough (like the two massive buffets in town). The buffet is around $6 for lunch and $9 for dinner. good eats and not too expensive.
One tip: don't park in the parking lot behind Bamboo House if you have a sensitive nose and/or stomach (especially in the summer).
