If you want the very best, this is the place to go. The crafters are many of them multi-generation carpinteros, and the techniques go back 400 years. Each piece of wood is hand-selected, hand-carved, and hand-rubbed (no sandpaper). Mortise and tendon (?) construction of course! You might worry that the pieces will look heavy or even too Southwest, but they have a wide range, including some very modern looking pieces.
