A European restaurant's classic "test" is organ meats which require careful prep and a light hand. La Chaumiere's have been consistently wonderfulover the years. They also prepare fish properly, and cook according to fat content, gelatinous composition and fragility of taste, which most "mods"ignore. A bijoux, this place.
