I'm surprised to see and read the March entries from folks who found The Fresh Fish Co way below their standards. For us, it's a special occasion to head in for dinner; especially on our birthdays.
I'm seriously into well prepared and unusual fish that're hard to find fresh in a high, dry desert. My Honey loves their filet mignon, and that's about all she orders there anymore, although she thinks some of the side dishes, e.g. Vanilla Sweet Potatoes, could be entrees. The Filet is almost as high a quality steak as you'll find in Denver, and for a decent price.
The fish is, however, in the spotlight. Even with the most unusual and eclectic preparation combinations one can create, I can always taste the superb quality seafood, including their shellfish offerings. The wine list is more than just sufficient and the wait staff has a good knowledge of pairing, even if we get a wine flight. We've only had dessert a couple of times, and they were delicious which still 'light.'
The menu itself isn't a work of art or marketing genius, but the contents make the time to study it well worth the minor effort. Some of the fish have to be tried just to be believed and understood, and the waitstaff is typically a great guide with their knowledge. We don't rush any part of the meal, and the waitstaff doesn't push anyone. I'm guessing the typically turnover on a table is about 1:15 or even 1 and a half hour.
So, calling ahead for a reservation is a good idea, at least for dinner and almost certainly Sunday brunch. We've always found reservations easy to make and even to change. The bartenders appreciate a good pour of good quality liquor, and typically serve some of the best highballs in town.
In the last couple of years the reception staff have not been quite as gregarious, pleasant, conversant, and cheerful, but are still fine.
In sum, this is a moderately priced restaurant with some high quality food, and is on our list of preferred restaurants for us and meeting friends. Having to drive over an hour to get to it from the mountains, we wouldn't go there if it weren't special.
I highly recommend it, even if it's not your birthday.
