i went to Smokey Bones on 08/28/09. I had something called the Double Trouble? It was a 1/3 of Saint Louis and a 1/3 of baby back ribs. The Baby Back ribs were good. the Saint Louis Style ribs were so burnt that i couldn't eat them. They were so over done it was to hard to chew-that is if i could get through the layer of carbonized sauce! So that is Smokey Bones in a nut shell. Sometimes good, sometimes bad. Its no wonder the place isn't busier. I would recommend that the owner review kitchen procedures with the staff. I don't see any quality control measures making their way out to the customer. Burnt food shouldn't be served.
