When eating at a restaurant for the first time, I always like to order a simple dish to more clearly see the impact of the chef, rather than the recipe. So I ordered lobster salad and fois gras. The lobster salad a rubbery compressed form with no salad to speak and no sauce except for a green trail on the side of the plate. The fois gras was just the opposite. You had to search for the liver which was cut up (why????) in tiny pieces dispersed in a dark tangy monotonic soup.
Pros: The setting is beautiful, if loud.
Cons: The food and service.
