The only reason one would say they didn't enjoy 4 on 6 is if they must drench their sushi in wasabi, mayo, soy, and other heavy sauce's in order to eat it. Saito knows how to choose the freshest fish and serve it to you with little accents of flavor in order to preserve the actual taste of it. To me it is like a great steak served medium rare, if you drench it in sauce you've ruined it...
