I'm a bit picky (okay... REALLY picky) about my barbecue. Pork is of course the only ""real"" barbecue but my measure of a great smoke chef is the quality of his beef brisket. If you can BBQ a good brisket, you likely have the rest down pat. Patrick's beef brisket is hands down the best I've ever had the pleasure to taste. Even though my weakness is spare ribs, I have rarely ordered anything but the brisket. (Have I said how much I like the brisket???) The ribs are always a big treat and the pulled pork is so tender (and I DON'T mean overcooked and reheated!) it almost melts in your mouth.
