If you want original Mexican food in the desert you should go to El Gallito. I've been in many Mexican restaurants in the U.S. and I've found out that El Gallito is one of the best ones I've been to. Their pork in salsa verde is awesome and all their other plates are excellent too. The place is cozy and very often there is a line to get in, especially in the high season which starts around early November and ends around mid April. They don't take credit cards but the food and friendly service compensates for that small inconvenience.
Pros: A few blocks from Palm Canyon Road
Cons: It may be a little hard to park the car close to the restaurant. But if you are willing to do a little walking you'll find a parking place.
