I'm not sure how long Peter Birk has been the chef at Ray's, but he is changing my opinion of the place for the better. There are plenty of restaurants with good views and good seafood in Seattle, but I like that Ray's is really focusing on the sustainable, seasonal aspect now, using local purveyors. I went in recently and just ordered the chef's 3-course offering, which was outstanding. I will admit that for the price, the portions seem a bit small, but by the end of the meal I was perfectly satisfied without being stuffed, and the steak entree beat the pants off of anything I've had at local steakhouses.
