Three of us went to Flying Fish last night for dinner and found that over all it was a worthwhile experience. One of our friends works at a seafood restaurant in Las Vegas so wanted to taste "local seafood" to compare. He left pretty satisfied, but not totally happy. Besides the Ono - which we sent back because it was overcooked and they brought us out another overcooked one - and the Mahi Mahi - which was uninspired and bland - it was great. Next time I would stick to appetizers only. The scallop appetizer was delcious, the oysters perfect (but steer clear of the ginger sorbet), and the Ahi poke fresh and delightful. They have a pretty wonderful wine list as well!
Pros: Great wine list and appetizers
Cons: Questionable service
