Chef made me some tapas even though very busy at lunch, very accommodating. Came back for breakfast and had the smoked brisket hash with poached eggs...AWESOME. Flakiest biscuits west of the Mississippi. Paper thin slices of fried onions with housemade ketchup amazing, tried chef?s sausages, make his own chorizo, Italian and breakfast sausages fell in love with them. Had a grilled tamale stuffed relleno type dish at night was dumbfounded as how they came up with this explosion of flavors and textures. Staff is very friendly and low key. Only place in the town with free parking, found that out on second visit. Was on Maui for 2 weeks went to the Bistro 6 times, can?t wait to go back
