with all due respect, sbmorton, the Texas BBQ staple ain't the hog - having said that, I have given Judge Bean's brisket a try THREE times - it certainly ain't Texas BBQ - if the Judge wants to claim he's from Texas, he needs to smoke it low & slow - Nashvillians, please do not let this be the bar with which you 'judge' Texas BBQ - folks 'round here love you some pork, but if done right, I guarantee the brisket will become a close second
