I too have frequented places that the owner, Takahashi Soda, has worked since Nakamoto and bar none he is the best sushi chef I have ever experienced. I don't know how they manage to keep the fish and uni so fresh! It's as if they had an ocean out back and caught your food on the spot. You have to give kudos to them being that Texas is so far from the coast and with 100+ degree weather, it's baffling how they accomplish that which many sushi restaurants aspire for. Great job guys!!!
