I drive by ths place twice a day. On the way home one friday night I decided to give it a try. The place is clean, the service is friendly. We ordered pork ribs and chicken. Both were cooked well but just didn't stand out. The bbq sauce tasted like ketchup and vinegar.
I've lived in Georgia and Texas, I 've had BBQ at varios places in both states. I 've eaten in Memphis at both the Rendevouz and Corky's. Bill's just doesn't do it. I feel bad because I like the people who run the place.
I think what's missing is that smoky BBQ tastes. The sause should be maybe sweeter and have a mild bite of spice to it.
There are too many options to for BBQ in Seattle to return to Bill's.
