Chowhounds who revel in delectable, exotic morsels all speak the name 'Thai Delight' in hushed, reverential tones. Accessible to culinary adventurers and cautious newbies alike, for Thai newbies it is important to know that the word 'curry' doesn't exclusively refer to the yellow powder in the aluminum Durkee canister ubiquitous in every grocery spice aisle in America. Curry is a generic term for a blend of spices with many flavor profiles e.g. yellow curry's predominant flavors come from cumin and turmeric, neither of which is used in any other curry. Yellow curry is pungent - green curry is mild and slightly sweet. I'd recommend the mild green curry w/chicken or the mild Thom Kha Kai, for the more advanced, Panang w/pork or Larb w/sticky rice.
