Confusion would be the appropriate word for the cuisine at Singles. The chef blends heavy sauces that mask the flavours of the dish and turn everything into a sweet, vaguely coconut flavoured mess. Instead of concentrating on enhancing fresh seasonal food, way too much sugar and salt is used resulting in unpleasantly muddled flavours. A cold cucumber-lime soup was thick and sweet with almost no taste of lime rather than the refreshing aromatic blend it could have been. Cooking techniques are primitive w/everything blended to the same consistency. Use a strainer. Do a reduction. There is a huge menu with too many items for things to be fresh. The staff is very pleasant, however.
