Among my friends I am known for my coleslaw, and for occasionally repeating myself. One repeated theme is the demise of cabbage and how, when I was a boy in Florida, the cabbage that we picked was so flavorful that it would burn my mouth. I suspect they have always thought I exaggerate. Despite the fine reputation of our local Berkeley/Oakland produce markets I have not been able to recapture that slightly painful flag of freshness. More secretly I have dreaded a fading of taste sensation with age, though publicly I have pointed an accusing finger at produce market logistics. Today I bought a head of cabbage from modest little Yasai Market. I am relieved to report that my sense of taste has indeed retained its integrity and thrilled at the discovery of this source of fresh cabbage. It is so flavorful it will burn your mouth.
