It used to be that you passed right by Prause Market on the way from Austin to House. Even then, it was easy to miss. And ever since the state diverted Highway 71 away from downtown La Grange, it's likely that a lot of people who pride themselves on their Texas barbecue knowledge don't even know the place exists.
It's a meat market, okay? You get your brisket and sausage on paper plates with a couple of decent sides. Splash the vinegary hot sauce on the meat and let that smoky, slippery, fatty beefiness overtake you. Almost makes going to Houston bearable.
