On October 25, 2008, Bryan Slaven, the Texas Gourmet, came to our Dilley Ranch and fixed a delicious gourmet wildgame dinner for 20 people! When he arrived on Friday evening, he immediately began marinating the Feral Hog Ham in a Sugar Cure for 16 hours. The next morning he began marinating the Cabrito. He and Debbie cooked all day using many of his rubs, spices, jellies and all fresh vegetables. He actually conducted a cooking class during the day, as he taught us how to use his many great products to mask any gaminess of the meats and enhance the flavors of each dish. He brought copies of his recipes for each of us. We were all amazed at how the jellies were used to make fabulous glazes! You would have never known that this was wildgame! \r
We started with Habanero Glazed Quail---an ""out of sight"" appetizer! Then came a Grilled Poblano Soup---probably the best soup we have ever had! Then came the main course of the Feral Hog, Cabrito, fresh green beans, and tiny new potatoes served with a nice glass of Cabernet. To top all of this---he fixed Bananas Foster over Vanilla Ice Cream for us! All I can say is---what a treat!\r
