Two criteria must be met to prepare perfect sushi:
1) ultra fresh fish, and
2) perfect rice
In 90% of the Austin sushi restaurants I have visited, the quality of fish was fresh and comparable. However, only one had the perfect combination of rice wine and rice vinegar in the sushi rice. There is no vinegar flavor, nor is there a smell to the sushi rice that taints the natural flavor of the fish. The background music (singer/standard) is nice, but not too loud, and the restaurant is astheticly pleasing, both in atmosphere and in food presentation. I highly recommend this restaurant for both those seeking to dine in or carry out.
