I spoke with the master BBQ person who revealed to me the makings of his amazing tri-tip. A longtime Portuguese mart with wonderful meat and a special blend of spices that were used on the tri-tip that he cooked over an open mesquite fueled rotisserie. That was the secret that made his life so much easier. Gotta contact the foodmart, Omar's. Not too much info, will prob have to call instead of dealing with them on-line. BEST TriTip ever, great flavor, quality...amazing for a wrestling meet, but really was great!
