When I first ate Nola's food, I didn't know what I was getting myself into. I had a cold, hadn't tasted a thing in days, and was afraid to try a new thing. The first burst of flavors with my first bite of gumbo changed my world. Usually, food is dulled down, lacks layers of flavors, and is, well, not what should be expected. Latin and Cajun food should have it all, flavor, spice, layers of heat, excitement, Nola's food has it all. Since my first encounter, I have tried more and more and still can't pick a favorite. Everything has been excellent.
