The shrimp enchiladas dish at Los Corrales is the best. This Mexican restaurant is located in Pinetop, a town in the beautiful White Mountains of Arizona and is almost always packed, especially on weekends. I believe that a restaurant that is filled with guests over and over again must have some really good food.\r

I was right about this one, once again. My husband and I had been looking for a place to celebrate his thirty first birthday when we came across a phone book ad about Los Corrales. I remembered having heard about it before then, but did not really give much thought to it at the time. I was curious to see what they had in store, so we decided to give it a try. I am so glad we did.\r

Shortly after we arrived, we were seated in a family-friendly, very exciting atmosphere setting. The ambiance was delightfull, with Mexican music playing joyfully in the background and voices of happy dinning people surrounding us. The entryway wall was covered with countless pictures of birthday guests topped with the famous birthday sombrero. \r

I know I wanted some kind of seafood, so when I saw ""Shrimp Enchiladas"" on the menu I did not hesitate and ordered them. They arrived served on a large white platter. Three, delicious-looking, bubbly enchiladas that smelled ridiculously great, bathing in a pink-looking enchilada sauce that I suspect is a house recipe. The presence of tomato paste and chili powder was quite obvious in them. They were topped with cheese, avocados , which are another favorite of mine, and a dollop of sour cream. The sauce was creamy and the shrimp was cooked to perfection. The price was another plus to this dish, since it only cost around twelve dollars at that time. \r

I would highly recommend this restaurant to anyone looking for a great Mexican place in Pinetop, Arizona. I returned to Los Corrales many times ever since and I admit, I order the same dish everytime: the shrimp enchiladas.\r
