This is one of my favorite restaurants.
Ichiban is Japanese through and through. The waitresses wear traditional kimonos and the cooks are usually Japanese (There may be a couple who are not, but it is rare).
Ichiban features tables and padded seats that surround a large stainless steel cooking area. You and your party will share a large table with several other people (there is an option to sit at a non cooking table alone if you want) and will give your order to the waitress. Soon, the chef will appear with a cart of raw food and spices. He will often begin with a flash of fire and the appetizers. The cooking is more of a show then anything and the better chefs catch shrimp in their pocket, on their hat, or even in their mouths. Lots of showmanship goes into the making of your meal.
You are offered each course one at a time with the chef scooping heaps of food onto everyone's plate.
The main course is cooked as you watch and scooped onto your plate as well.
