This is real soba like I've only had in Japan. From the texture of the noodles, to the flavor of the sauce, it's all authentic and delicious! Soba is supposed to have a delicate, subtle flavor, so it may not appeal to the common denominator, but I'm happy that Goji chose to do it right and not compromise. The onigiri (rice ball) was fantastic too, as was the tempura (unlike so many squishy, overly battered, poor imitations you find in the US). I just wish Goji were located closer to the city-- 20th & Hamilton is pretty far out of my way.
