I really believe that the popularity of Beau Jo's has more to do with hungry Denverites returning from a day or weekend of play in the mountains than the actual pizza. When you spend a day on the slopes whether it be skiing, boarding, biking or hiking, and you are heading down I-70 down the hill, the idea
of Beau Jo's pizza is an enticing craving. Add to that the small cozy town of Idaho Springs with its inviting main street, and the old mining feel of the
restaurant, and any good food will do.
The product does have its merits, after all if it were just cardboard no one would return. The selection of crusts, cheeses, sauces and toppings is noteworthy. I love their Prairie Pie with anchovy.
I will continue to eat at Beau Jo's and recommend it
for newcomers.
