I have a little bit of an inside scoop and I would say........it would be very difficult for one of her wedding cakes to collapse. The cake layers have metal cake stands inside..........plates with strong legs as opposed to the wooden sticks other bakers use. The only time I have heard about problems with her wedding cakes is the "outdoor" wedding in late May or June...............the temperature can be in the upper 80's or even the 90's, and tall wedding cakes will start to melt under those conditions. Brides are warned of this problem and some of them rent huge electric fans to cool the cake..........this is so stupid, just have the cake inside with air conditioning during the summer. Everyone knows now the best time of the year to get married in the South is the Fall but..........cakes just falling, I haven't heard of that.
The only problem I see is since Cecilia left the bakery, it seems as if they are trying to cut corners just to make a profit.............once in a while an everyday cake will taste old, like it was baked a year ago and put into the freezer.
The quality has gone down just slightly but cakes are still better than the rest in Athens.
