I guess that is what I get for ordering an Eggplant Parmigiana sub from a pizza place. I don't know, but it wasn't extremely good. The eggplant wasn't sliced thin enough, and it seemed like it wasn't cooked thoroughly. (Although I am not an EGGPLANT EXPERT!) This was only my second time trying this type of sub. My first sub was from Kipo's, another local roast beef/sub place. It was outstanding. I am sure Pizza Express has good pizza though, because my husband eats there often. It is a clean, nice place, so I won't give it a bad review - just don't get an eggplant sub there.
