Casa Nueva has a wonderful vegan breakfast burrito that has a mix of tofu and veggies with a perfect combination of seasonings and sauce. I got tofu bacon on the side, and had one of the best breakfasts I have ever had. The restaurant has plenty of other vegetarian and vegan options, and is loved by both vegetarians and non vegetarians. I was also able to find plenty of healthy choices that my toddler was happy with! As a bonus, the workers are all co-owners, and all of the ones I have met have been extremely friendly and eager to help.
