Let me start out by saying I am a native St. Louisan and worked in THE authentic St. Louis style pizzerias all through high school and college - I know St. Louis style pizza and this is close, but no cigar. The people at 5th street were very friendly. I had a very large take out order and without me even having to ask, one of the delivery drivers came from behind the counter automatically helped carry it to the car for me - and I am not a woman! As for the pizza (which is what really matters here), I was disappointed - maybe my expectations were too high. The crust was very good. Thin and crispy as you would expect. The major disappointment was the lack of toppings. The sauce was good and tangy with a slight sweetness to it. But it was much too thinly spread. I want to see RED sauce, not pink crust. The veggies were sliced too thin - so they dried up during the cooking process. I was hoping to sink my teeth into peppers and onions and enjoy the full flavor. Cheese: Cheese is an expensive topping I understand, but one of the defining characteristics of the St. Louis pizza is the PROVEL cheese. Our pizzas were just lightly dusted with it. In my opinion, the crust should not be visible underneath the toppings and cheese. Unfortunately, I saw too much crust. St. Louis style pizza is at its best when that provel cheese is abundant enough to stick to the roof of your mouth. I missed that experience. Lastly, and probably my biggest disappointment as a meat eater was their use of sausage and hamburger ""pellets"". The pizzerias in St. Louis use fresh ground meat and it is placed/pinched onto the pie in large meaty chunks. Having said that, I will still give them another try. Maybe it was just a bad night or just that particular pie maker. The pizza was not bad by any means, but without more generous toppings, it is just a teaser. The pepperoni rolls were excellent I must say!!
